For what it's worth, here is a picture of my 16X7 in rims (not mounted on car) and 16X7.5 rims (mounted on the car).
The tires on both rims are the same make, model, and size (Hoosier R3SO3 245/45/16).
You can see that on the 7" rims, the tires "bulge" out more than on the 7.5" rims. The minimum "recomended" rim width for 245 tires is 7.5".
